Vegan Cheese

Okay, hear me out. I’ve been craving pascualina for a while now. Pascualina is a traditional savory tart, usually made around Easter (Pascua), and it’s filled with greens, ricotta, soft cheeses, and sometimes even béchamel.

Delicious? Absolutely. Vegan-friendly? Not at all.

Of course, I could simply omit the cheese and make a béchamel with vegan butter, but that feels like cheating. This seems like the perfect excuse to finally try making vegan cheese at home.


The Plan

I’ve had this recipe bookmarked for a while, and before jumping into veganizing the whole pascualina, I want to master the cheese part first:

The only concern I have with vegan cheeses is the fat content—they can be calorie-dense. So portion control will be key: small slices, carefully measured, enough for flavor but not excess.

If everything works out, the final product should look something like this classic pascualina—only without the eggs, and with my homemade vegan cheese:


This is an experiment, and like most food experiments, it may fail the first time. But whether the result is a hit or a learning experience, I’m excited to take this next step in my journey of veganizing traditional recipes.
