
Today I made a vegan version of ricotta-filled manicotti—and it turned out amazing! 🎉
I used vegan cheese for the filling, and while I was happy that it actually melted, it didn’t bubble up the way dairy cheese usually does. The texture ended up looking a little plasticky, but the flavor was still satisfying.
Finding a vegan cheese I truly enjoy is definitely going to be a challenge, but this dish was still a small victory. Every experiment gets me a step closer to re-creating the comfort foods I love—veganized and delicious.
